Effect of drying on time, color, pH, Brix and micrographs were evaluated. The data of total drying time revealed that the maximum value was belonged to "CD" (220 min). The minimum value was obtained by "MW1" (10 min). By comparison of total color change (.E), the highest values were achieved with "CD+MW3", whereas the lowest values were achieved with "MW2". Under all drying applications, the maximum pH and Brix changes were observed with "CD+MW2". Eight different drying treatments were applied with using levels of microwave power (200 and 300W), vacuum conditions (200 and 400mmHg), and pulse ratios (PR=1 [Continuous] and PR=2 [30s t(on)/30s t(off)]). Based on the drying settings used, increasing microwave power, vacuum treatments, and decreasing pulse ratio provided shorter drying time. The Page model gave a high fit of statistical values at all data points used to describe the drying kinetics of dried apple samples. At the 300W-200mmHg-PR=2 application, the quantity of potassium was found to be the highest compared with that of the other drying conditions. The protein rate of dried apples was higher than the fresh samples because of water loss. The lowest effect on L* (lightness [78.27]), a* (green/red [10.70]), and b* (blue/yellow [32.72]) values were observed in samples dried at the 200W-400mmHg-PR=2, 300W-200 mmHg-PR=1, and 200W-200mmHg-PR=2, respectively. As a conclusion, the treatment of 300W-400mmHg-PR=1 was found most effective with a shorter drying time (30min) and high protein content (2.5%). Practical applicationsApple (Malus domestica L.) is one of the most important fruit due to its nutritional composition and the presence of biologically active compounds that provide positive effects on human health. Therefore, apple is grown and farmed extensively in most agricultural areas around the world. Drying is one of the oldest methods of food preservation. Dried apple can be not only stored longer, but also used as packaged snacks and integral breakfast foods. Combining microwave and vacuum drying offers rapid and uniform drying, which can be used to dry food products on a commercial scale. In addition, application of intermittent microwave-vacuum technology in the drying of apple can result in significant improvement in quality.Item Determination of drying kinetics and quality parameters for drying apricot cubes with electrohydrodynamic, hot air and combined electrohydrodynamic-hot air drying methods(Taylor & Francis, 2020-09-22) Polat, Ahmet; İzli, Nazmi; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği.; AAG-8333-2021; R-7996-2016; 57204605310; 15848516300In this study, the effects of the electrohydrodynamic (EHD) drying method with needle and wire, the hot air method and a combination of the EHD-hot air methods on the drying kinetics, color, rehydration ratio and scanning electron microscope images of apricot samples were investigated. In addition, the experimental drying data were modeled using ten different mathematical thin layer drying models. It was determined that the rehydration ratio values of the samples dried with the combination of EHD and hot air were generally higher than the rehydration ratios of the samples dried with hot air or EHD only. Samples from all the drying methods were compared with fresh samples; the color parameters were affected, and scanning electron microscopy images revealed the different physical changes in the microstructure of the products. The post-harvest processes are applied to ensure that the products are consumed throughout the year. Drying is one of the most important postharvest processes, and the hot air method is generally used. In this study, 'Ankara' pear samples were dried by combining the electrohydrodynamic method, a promising drying technology, with hot air. This study aims to investigate the effects of different air velocity and voltage values on drying time, color, rehydration capacity, and microstructure. In addition, ten mathematical drying models were applied to the experimental results of the drying processes to obtain the model that best explains the drying curves. Two different air velocities (1.5 and 2.5 m/s) and four different voltage values (15, 20, 25, and 30 kV) were used for the drying processes. The process of drying pear products in the shortest time (80 min) was in the application of 30 kV-2.5 m/s. The models that best explain the drying curves of 'Ankara' pear were found to be the Logarithmic and Midilli et al. models. While the highest L* value was observed in the fresh product, the closest value to this value was observed in 15 kV-1.5 m/s applications. Rehydration capacity values of pear samples dried at high voltage values (25 and 30 kV) increased with increasing air velocity. The EHD-hot air method used in this study can be an alternative to conventional drying and can be a viable method in the drying industry by determining the appropriate air velocity and voltage value in order to provide better quality products in a short time.Item Effect of convective and microwave methods on drying characteristics, color, rehydration and microstructure properties of ginger(Soc brasileira clencia tecnologia alimentos, 2019-09) Izli, Nazmi; Polat, Ahmet; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği/Tarımsal Enerji Sistemleri Bölümü.; AAG-8333-2021; 15848516300; 57204605310In this research, the effects of convective drying method (60, 70 and 80 degrees C) and microwave drying method (160 and 350 W) on the drying characteristics, color, rehydration and microstructure properties of ginger has been examined. For the purpose of choosing the most appropriate thin-layer drying models in terms of the drying applications, nine mathematical models have been applied on the experimental data. Pursuant to the assessment of the statistical tests, models of Diffusion Approach, Midilli et al. and Page that represent drying characteristics are found to be better than other models. Drying applications have affected the color values of all fresh ginger samples. Results indicated that browning degree increases as drying temperature and microwave power rise. The samples dried at 60 degrees C has the maximum rehydration ratio while the samples dried at 80 degrees C has the minimum rehydration ratio. Scanning electron microscopy visuals have ascertained that the deterioration of the ginger samples remarkably surged due to the rise in either drying temperature or microwave power. Applying the convective and microwave techniques as an alternative drying method for ginger samples is possible.Item Elektrohidrodinamik-sıcak hava kombinasyonu yöntemiyle bazı tarımsal ürünlerin kurutma parametrelerinin belirlenmesi(Bursa Uludağ Üniversitesi, 2023-07-28) Polat, Ahmet; İzli, Nazmi; Bursa Uludağ Üniversitesi/Fen Bilimleri Enstitüsü/Biyosistem Mühendisliği Anabilim Dalı.; 0000-0003-1673-7165Tez çalışmasında, sarımsak ve armut örnekleri yüksek enerji verimliliği ve kaliteli ürün vadeden bir kurutma teknolojisi olan elektrohidrodinamik (EHD)-sıcak hava kombinasyonu yöntemi kullanılarak kurutulmuştur. Her iki örnek için dört farklı yüksek gerilim değeri (15, 20, 25 ve 30 kV) kullanılmıştır. Sarımsak örnekleri için farklı sıcaklık(50 ve 55°C) ve gerilim değerlerinin, armut örneklerinde ise farklı hava hızı (1,5 m/s ve2,5 m/s) ve gerilim değerlerinin örneklerin kuruma süresi, renk parametreleri, rehidrasyon özellikleri ve mikro yapısı üzerine etkisi incelenmiştir. Ek olarak, deneysel verilerin sarımsak ve armut örneklerinin kuruma davranışını tanımlayabilecek uygun modeli seçmek için on farklı matematiksel model kullanılmıştır. Ayrıca sarımsak örneklerinin kurutulması sırasında geliştirilen cihazın enerji verimlilik değerleri hesaplanmıştır. Sonuçlar incelendiğinde, her iki örnek için de diğer parametreler sabit tutulduğunda gerilim değerinin artması kuruma süresini azaltmıştır. Kurutulmuş sarımsak örneklerinin kuruma davranışlarını en iyi tanımlayan modellerin Difüzyon Yaklaşımı, Newton ve Verma ve ark. modelleri, armut örnekleri içinse Midilli ve ark. ve Logaritmik modelleri olduğu bulunmuştur. Artan kuruma sıcaklığı, sarımsak örneklerinin a* ve b* renk değerlerinde azalmaya neden olmuştur. Armut örneklerinde en yüksek L* renk değeri taze örnekte gözlenirken, bu değere en yakın değer 15 kV-1,5 m/s uygulamasında ölçülmüştür. Farklı sıcaklık ve gerilim ile kurutulan sarımsak örneklerinin rehidrasyon kapasitesine değerlerinde önemli bir farklılık belirlenmezken (p<0,05), yüksek gerilim değerlerinde (25 ve 30 kV) kurutulan armut örneklerinin rehidrasyon kapasite değerleri artan hava hızı ile artmıştır. Farklı sıcaklık, gerilim ve hava hızı değerlerinin örneklerin mikroyapılarına etkisi olduğu görülmüştür. Çalışmada kullanılan EHD sistemin sıcak havayla kurutma yöntemine entegre edilmesi ürünlerin kurutma verimini ve kalitesini arttırabileceği sonucuna varılmıştır.Item Freeze and convective drying of quince (Cydonia oblonga Miller.): Effects on drying kinetics and quality attributes(Springer, 2018-10-30) Izli, Nazmi; Polat, Ahmet; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği Bölümü.; AAG-8333-2021; 15848516300; 57204605310This research aimed to investigate drying characteristics and quality properties of quince subjected to freeze and convective drying at air temperatures of 45, 55, 65 and 75 degrees C. To determine the best drying model for those techniques, nine thin-layer mathematical models were fitted to the experimental results. The statistical analyses revealed that the Two Term, Midilli et al., Diffusion Approach and Two Term Exponential models were better than the other tested models. The results of the color analyses showed that the drying treatments had an effect on the fresh quince samples, and the color of the freeze dried samples was closest to the color values of the fresh samples. The highest rehydration ratio (2.78) was recorded for the freeze dried samples, and the lowest ratio (2.25) was observed in the samples subjected to convective drying at 75 degrees C. Scanning electron microscopy showed that the freeze dried quince samples were only slightly different from the fresh samples and that the disruption of the structure of the quince samples significantly increased as the convective drying temperature increased. Consequently, freeze drying can be an appropriate method for obtaining good-quality fruit samples.Item Havuç ve patatesin kurutulmasında ultrases ön işlem uygulamasının etkisinin belirlenmesi(Bursa Uludağ Üniversitesi, 2019-09-04) Polat, Ahmet; İzli, Nazmi; Bursa Uludağ Üniversitesi/Fen Bilimleri Enstitüsü/Biyosistem Anabilim Dalı.; 0000-0003-1673-7165Yapılan bu tez çalışmasında farklı dilim kalınlarındaki (2 ve 4 mm) havuç ve patates örnekleri farklı sürelerde (0, 20 ve 40 dakika) ultrases ön işlem uygulanarak kurutulmuştur. Kurutma işlemi modifiye edilmiş bir fırında 60 ve 70 °C sıcaklıklarda ve 1 m/s hava hızında gerçekleştirilmiştir. Havuç ve patates örneklerinin kurutma kinetikleri oluşturulmuş ve kurutma işlemlerinde en iyi ince tabaka kurutma modelini seçmek için 10 matematiksel model deneysel verilere uygulanmıştır. Ultrases ön işleminin havuç ve patates örneklerinin kuruma süresi ve hızı, renk, rehidrasyon, pH ve suda çözünür kuru madde (°Briks) değerleri üzerine etkisi incelenmiştir. Havuç ve patates örneklerinin tüm kurutma koşullarında artan sıcaklık, azalan dilim kalınlığı ve uygulanan ultrases ön işlem süresinin artmasıyla kuruma sürelerinde azalma meydana gelmiştir. İstatistiksel değerlendirmeler sonucunda, Midilli ve ark. modelinin diğer modellere göre havuç ve patates ürünlerinin tüm kurutma koşullarında kurutma kinetiklerini açıklamak için en uygun model olduğu tespit edilmiştir. Havuç örneklerinde en yüksek rehidrasyon oranı değeri (6,930) 60 C sıcaklıkla kurutulan 40 dakika ultrases ön işleminden geçmiş 2 mm kalınlığındaki örneklerde belirlenirken, patates örneklerinde en yüksek rehidrasyon oranı değeri (2,856) 60 C sıcaklıkla kurutulan 40 dakika ultrases ön işleminden geçmiş 4 mm kalınlığındaki örneklerde belirlenmiştir. Kurutma işlemleri sonucunda havuç ve patates ürünlerinin b* (sarılık) değerlerinde azalma tespit edilmiştir. Havuç ve patates ürünlerinde en düşük pH ve °Briks değerleri taze ürünlerde gözlemlenmiştir (p<0,05). Sonuç olarak, ultrases teknolojisi, konvektif kurutma işleminde tarım ürünlerinin kuruma süresini azaltmak ve kalite parametrelerinin korunması için uygun bir yöntem olarak kullanılabileceği belirlenmiştir.Publication Influence of ultrasound pre-treatment and convective drying on the quality parameters of carrots ( Daucus carota l.)(Plapiqui(uns-conicet), 2022-01-01) Polat, Ahmet; İzli, Nazmi; Taşkın, Onur; POLAT, AHMET; İZLİ, NAZMİ; TAŞKIN, ONUR; Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği Bölümü; 0000-0002-5741-8841; R-7996-2016; AAG-8333-2021; AAH-5018-2021In this study, carrot samples with different slice thicknesses (2 and 4 mm) were dried by applying ultrasound pre-treatment at different time periods (0, 20 and 40 min) and the changes in colour, rehydration, pH and degrees Brix values were evaluated. Besides, microstructures of dried samples under different conditions were observed through scanning electron microscopy images. Drying was carried out in a modified oven at temperatures of 60 and 70 degrees C with an air velocity of 1 m/s. When compared to fresh potatoes, a decrease in yellowing values (b*) was observed for the different drying conditions employed. Carrots samples with a thickness of 2 mm, dried at 60 degrees C and treated with ultrasound for 40 min, presented the highest rehydration ratio (6.930). It was observed that pH and degrees Brix values changed from 6.705 to 6.120 and from 68.70 to 6.80, respectively. It was observed that the longer the duration of pre-treatment with ultra-sound, the greater the change in the structure of the product. The results showed that the pre-treatment by ultrasound can be used as an alternative method for drying carrot sample.Item Intermittent microwave drying of apple slices: Drying kinetics, modeling, rehydration ratio and effective moisture diffusivity(Ankara Üniversitesi, 2018-11-22) İzli, Nazmi; Polat, Ahmet; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği Bölümü.; AAG-8333-2021; 15848516300; 57204605310In this research, thin layer drying characteristics, rehydration ratio and effective moisture diffusivity of apple were investigated using microwave dryer which has intermittent and continuous modes. Drying time varied between 25 and 215 minutes and they declined with the rise in microwave power and reduction in pulsing ratio. In an attempt to pick the optimum thin layer models for the drying applications, 8 mathematical models suited to the experimental results. On the grounds of the statistical tests evaluation, Midilli et al model which represent drying characteristics are optimally suited than other models. The highest rehydration ratio was recorded for the samples dried at 100W continuous mode and the lowest ratio at 300W continuous application. Effective moisture diffusivity values were computed by the 2nd law of Fick and changing between 3.04x10(-9) and 2.53x10(-8) m(2) s(-1). According to the drying treatments, increased microwave power (100 and 200 W) and vacuum (200 and 400 mmHg) applications provided higher drying rates and protein content. Dried pear samples had a higher mineral content than fresh samples because of the increasing dry matter content. At the higher vacuum level experiments, the energy consumption reduced and the rehydration ratio increased. Moreover, the higher microwave power caused a decrease of the L* (lightness) value. However, a regular pore size and pore distribution in all drying experiments were observed in the microstructures of microwave-vacuum-dried samples.Item Mathematical modeling of ultrasound pretreated carrot slices(Bursa Uludağ Üniversitesi, 2019-03-20) Polat, Ahmet; İzli, Nazmi; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği Bölümü.In this study, the effects of ultrasound pretreatment, air drying temperature and slice thickness on the drying kinetics of carrot were analyzed. Ultrasound pretreatments were applied to carrot samples of different slice thicknesses with for 0 (control), 20 and 40 minutes. All products were dried in the convection oven with constant air speed 1 m s-1 . The drying times varied from 260 to 110 minutes depending on the varying slice thicknesses, temperatures and the applied ultrasound pretreatments. In order to determine a suitable thin layer model for drying applications, 10 different mathematical models were fitted to the experimental results. The model was selected as the best model with the highest value of R 2 (Regression coefficient), lowest RMSE (Root mean square error) and χ2 (Chi-square). As a result of the statistical evaluation, it was determined that the Midilli et al. model is the most suitable model for explaining the convective drying characteristics of carrot according to other models. Consequently, ultrasound pretreatment can be used as a favorable method for reducing the drying time of the carrots in the convective process.Item Okul müdürlerinin performans değerlendirmelerine ilişkin öğretmen algıları(Bursa Uludağ Üniversitesi, 2019-04-10) Polat, Ahmet; Sarıtaş, Mustafa; Bursa Uludağ Üniversitesi/Eğitim Bilimleri Enstitüsü/Eğitim Bilimleri Anabilim Dalı/Eğitim Yönetimi Bilim Dalı.Bu araştırma, okul müdürlerinin performans değerlendirmelerine ilişkin, öğretmenlerin objektiflik algılarını incelemek amacıyla yapılmıştır. Araştırma, tarama modelinde betimsel bir araştırmadır. Bu araştırmanın çalışma evrenini, 2016-2017 Eğitim-Öğretim yılı, Bursa ili Osmangazi merkez ilçesindeki, Milli Eğitim Bakanlığına bağlı resmi ilkokul, ortaokul ve lise türündeki 224 okulda görev yapan 8742 öğretmen oluşturmaktadır. Bu araştırmada örneklem büyüklüğü için oranlı eleman (Tabakalama) yoluyla 450 kişi olarak belirlenmiş olup 458 kişiye ulaşılmıştır. Çalışmada araştırmacı tarafından geliştirilen, 37 madde ve 3 alt boyuttan oluşan, geçerliği ve güvenirliği test edilmiş ''Okul Müdürlerinin Performans Değerlendirmelerine İlişkin Objektif Algı Ölçeği '' kullanılmıştır. Verilerin analizinde SPSS 23.0 programından yararlanılmıştır. Verilerin analizi için aritmetik ortalama, yüzdelik, standart sapma gibi betimsel istatistikler ile bağımsız örneklemler için t- testi ve tek yönlü varyans analizi (Anova) kullanılmıştır. Parametrik olmayan istatistikler için Mann Witney U testi ve Kruskal Wallis testi kullanılmıştır Araştırmanın bazı sonuçlarına göre, okul müdürlerinin performans değerlendirme sürecindeki rollerine ilişkin, öğretmenlerin objektiflik algılarının genel olarak yüksek ve olumlu düzeyde olduğu belirlenmiştir. Okul müdürleri performans değerlendirme sürecinde, gözlem kontrol ve iletişime ilişkin rolleri büyük ölçüde yerine getirmişlerdir. Okul müdürüyle çalışma süresi arttıkça öğretmenlerin objektif değerlendirilme algısı da artmıştır. Okul müdürüyle çalışma süresi azaldıkça öğretmenlerin objektif değerlendirme algısı da azalmıştır. Branş değişkenine göre, sınıf öğretmenlerinin diğer branşlara göre, okul müdürlerinin performans değerlendirme sürecindeki rollerine ilişkin objektiflik algıları daha yüksektir. Bu kapsamda, okul müdürlerinin performans değerlendirme sürecindeki rollerine ilişkin objektif öğretmen algıları genel olarak, ilkokulda görev yapan öğretmenlerin, ortaokul ve lisede görev yapan öğretmenlere göre daha yüksektir. Okul müdürlerinin öğretmenlere vermiş olduğu performans notu arttıkça, öğretmenlerin de okul müdürlerinin performans değerlendirme sürecindeki rollerine ilişkin objektiflik algılarının arttığı belirlenmiştir.Item Sürekli ve kesikli mikrodalga yöntemleriyle kurutulan elmanın renk değişim analizi(Bursa Uludağ Üniversitesi, 2020-02-06) Polat, Ahmet; Kurtulmuş, Ferhat; İzli, Nazmi; Bursa Uludağ Üniversitesi/Ziraat Fakültesi/Biyosistem Mühendisliği Bölümü.Bu çalışmada, sürekli ve kesikli mikrodalga ile kurutulan elma örneklerinin renk değişimleri görüntü işleme yöntemi kullanılarak incelenmiştir. Elma örneklerinden kurutma öncesi ve sonrası olmak üzere toplam yüz adet görüntü alınmıştır. Farklı yöntemlerle kurutulan elma örnekleri RGB renk uzayından L*a*b* renk uzayına çevrildikten sonra analiz edilmiştir. Ayrıca örneklere bir halka maskeleme işlemi uygulanmıştır. Halka maskeli ve halka maskesiz yöntem kullanılarak iki farklı veri elde edilmiştir. Toplam renk değişimi (ΔE), kroma (C), hue açısı (α°) ve kahverengilik indeks (BI) değerleri renk için kinetik parametreleri olarak tanımlanmıştır. Sonuçlar incelendiğinde, kurutmanın tüm örneklerin renk parametreleri üzerine etkisi olduğu görülmüştür. Halka maskeleme yöntemindeki L*, a* ve b* değerlerin halka maskesiz yönteme göre farklı olduğu tespit edilmiştir. Kahverengilik indeksi sonuçları incelendiğinde ise, 200W-KO:3 uygulamasındaki sonucun taze elma ürününe en yakın değer olduğu tespit edilmiştir. Sonuç olarak, sürekli ve kesikli mikrodalga yöntemleri ile elmanın kurutulmasında ürünün renk parametreleri üzerine önemli bir etkisi olduğu ve diğer kurutma yöntemlerine alternatif olabileceği gözlemlenmiştir
