Abstract
Bu çalışma, yüksek proteinle beslenen 40 günlük Cobb ırkı broylerlerde karkas bölümlerinin oranlanması, but ve göğüs etlerinin kimyasal bileşiminin ve enerji miktarlarının saptanması amacı ile gerçekleştirilmiştir. Bütün piliçlerin %21 'ini göğüs, %11'ini kanatlar, %14' ünü alt butlar ve %19'unu da üst butlar oluşturmaktadır. Bu karkas kısımlarının ise kullanılabilir kısımları sırala % 100, %52, %62, %71 oranlarında olup, bütün karkasın kullanılabilir kısmı ise %48'dir. Derisiz but ve gögüs etleri rutubet, protein, yağ, kül ve enerji miktarları bakımından analizlere tabi tutulmuştur. Bu amaçla, Musculus pectoralis superficialis ve M. pectoralis profundus (göğüs eti) kaslarından ve M. iliofıbulari s, M. flexor cruris lateralis ve M. flexor cruris medialis (but eti) kaslarından numuneler alınmıştır. Ortalama rutubet, pro tein, yağ, kül ve enerji değerleri but etinde sırasıyla %74. 42, ·%24. 37, %2. 93, %1. 12 ve 123 kcal, göğUs eti ör neklerinde ise ırasıyla %74. 68, %27. 03, %0. 78, %1. 23 ve. 114 kcal olarak belirlenmiştir. Sonuç olarak, yüksek proteinle beslenen 40 günlük Cobb ırkı broylerlerden elde edilen göğüs ve but etlerinin yüksek protein, düşük yağ miktanna sahip olduğu ve bunun Ulkemizdeki hayvansal protein açığının kapatılmasında önemli bir faktör olduğu dUşUnüldü.
This study was made in order to detennine proportion of carcas cuts and composition and energy values ofbreast and thigh meats ofCobb race 40 day old broilers fed with high protein. Proportion of who le ch i eken were found as 21% breast, ll% wings, 14% leg ( drumstick) and 19% thigh. Fractions that were edible of these parts were 100%, 52%, 14%, 71% respectively and whole chicken's edible fraction was 48%. Lean thigh and breast meats were analysed for moisture, protein, fat, ash and energy amounts of both grup meats were calculated. For this purpose, samples from Musculus pectoralis uperfıcialis and M. pectoralis profundus (breast meat) and M. iliofıbularis, M. flexor cruris lateralis and M. flexor cruris medialis (thigh meat) were used for analysis. Mean moisture, protein, fat, ash and energy values were determined as 74. 42%, 24. 37 %, 2. 93 %, 1. 12 % and 123 kcal respectively in the !ean thigh meats and 74.68 %, 27.03 %, 0.78 %, 1.23 % and 114 kcal respectively in the !ean breast meats. As a result, breast and thigh meats which were provided from 40 day old Cobb race broilers fed with high protein had high protein and low fat contents, and they were thought as an important factor to meet the deficit of animal protein in our country
